    Flour, water, salt, yeast and time. A thin, crackly crust and an open, chewy crumb.

Stirred, not baked.

  • Arroz con lechegluten-free

    Rice cooked slow in milk and cinnamon until it turns thick and creamy. Cold from the fridge, or warmed up gently. Cinnamon on top.

    Vanilla custard made from scratch, layered with ripe bananas and vanilla wafers, chilled until the wafers go soft. Whipped cream on top.

  • Dulce de lechegluten-free

    The Cuban kind, not the caramel spread. Milk curdled with a squeeze of lime, then cooked down with a lot of sugar and cinnamon until the curds turn golden in their own syrup. Eat it cold, with a spoon.
